Warm and Roasted Winter Salad Bowl

The ultimate bowl of winter comfort food! Yukon Gold potatoes and yams are roasted until golden and then tossed with warm rainbow quinoa, shredded chard, green onion, and a quick vinaigrette. This has been topped with crunchy pepita seeds and sliced avocado.

We’ve included the Dijon mustard for the vinaigrette, but the other ingredients you should have in your pantry (olive oil, red wine vinegar), or, you’re welcome to use your favorite vinaigrette. Recipe adapted from ohsheglows.com
