Mashed Potato Baked Enchiladas

The mashed potatoes are used as the enchilada filling in a corn tortilla and then topped with a green enchilada sauce, cilantro, green onions, and garnished with avocado and lime. We’ll also include a recipe for the mashed potatoes.
