Local All Natural Grass-fed Beef  ~

**We are not yet accepting beef orders for 2012. However, we are accepting Lamb and Pork orders (see below).**

If you are interested in providing yourself and your family with a healthy alternative to conventional feedlot beef, then our all natural  grass-fed beef program is for you. Our cattle are free from growth hormones and antibiotics and are raised and finished on quality grass  pasture and are moved often to maintain healthy pastures and healthy cattle. Not only is our all natural beef good for you, but it has also scored high in a Washington State University taste test* and received raving reports from our customers.

*We have had our beef tested at WSU and it received great reviews for flavor, tenderness, and a healthy omega 3 to omega 6 fatty acids ratio  (which makes it heart-healthy, unlike typical grain-fed beef). One of the researchers stated that our steaks were the best grass-fed steaks he had ever tasted in the United States or New Zealand!

Last fall when I bought beef I was very nervous about buying a product I had never had, as I was so fussy about my beef and other meats. I did not know how grass-fed beef could possibly be better than grain-fed beef. Well, I could not have been more wrong. The hamburger was full of flavor, the roasts divine, but the steaks were where you separate the ‘men from the boys.’ The steaks were out of this world–reminiscent of Michigan back when beef was ‘beef.’ The New York strips were melt-in-your-mouth perfect! Please reserve another 1/4 for me.

Where’s the beef? Answer…in my stomach and in the freezer to my Epicurean delight.  I picked up my 1/4 order last Saturday…and pulled out cube and a T-bone steak. I made the cube Sunday morning and took one bite and said to myself–oh my…this is good! The T-bone I barbecued Sunday night with fresh picked chanterelle mushrooms–oh my…it melted in my mouth and was so full of flavor.  Honestly, I hadn’t had beef like that since 1983 when I got free-range  cattle in Idaho that was grass fed on BLM land. I thank you for raising such quality and my stomach will thank you through the year especially with the fine produce I receive from you.

I wanted to let you know that we decided to take advantage of a meat sale that [another place] was having.  Their meat is good and we are happy to be eating meat that has not been injected with yucky
stuff….BUT, there is a flavor missing that we just loved about our Klesick Farms meat.  Oh well, lessons learned for us.  When we run out of this meat, which may take a while as we purchased a 1/2 cow, we’ll be looking forward to ordering with you guys next year.  If someone is not able to keep their order with you guys, we may be able to take it off of your hands.

Local All Natural Grass-fed Lamb ~ **We are now accepting Lamb orders for 2012**

Our friends, Ken and Kathryn at Horse Drawn Produce on Lopez Island, have again offered to make their grass-fed lamb available to our customers! We are really excited to be able to offer this quality locally raised product. Ken and Kathryn are excellent farmers, but even more important to us is their sincere commitment to sustainable, healthy farming. It is their way of life, not their job.

The lamb is available only as a whole share, so smaller portions will not be available. Lamb orders are due by April 15.

There will be three payments: a reservation deposit of $200 to Klesick Family Farm (due when you place your order), a payment of any remaining balance to Klesick Family Farm (once we know the final hanging weight of your lamb), then $90 to Del Fox Custom Meats in Stanwood for their processing, cutting and wrapping service (to be paid when you pick up your meat there in May/June).

You will pay KFF $5/lb. based on the hanging weight (the weight of your share before it is cut and wrapped). The average hanging weight of a lamb is around 50 lbs. Therefore, an estimate of what you might owe KFF is $5 x 50 lbs. = $250, and then a separate $90 to the meat shop.

Local All Natural Non-GMO Pork ~ **We are now accepting Pork orders for 2012**

Ken and Kathryn, at Horse Drawn Produce on Lopez Island, have again agreed to market their premium family-raised hogs through us. Their pigs are happy, healthy and fed a vegetable and organic grain diet.  The reason I am willing to offer their pork and lamb is because they only use organic feed.  Every other farm that markets their animals as natural or whatever and does not specify them as organically fed, has actually fed them GMO (Genetically Modified Organism) corn, soybeans and canola – and hogs, in particular, eat a lot of grain.  And lastly, hogs are one of the farm animals that are getting a lot of genetic modification research and I want to support real hog farming on real family-friendly farms. If you are interested in supporting some local hog farming, here is your opportunity.  The hogs are sold by the half and whole shares and will be available in mid June.
